Apple Coleslaw

Ingredients

  • ½ head green cabbage, finely chopped, about 4-6 cups (1 L to 1.5 L)
  • 2 each, carrots and celery stalks, finely diced
  • 1 apple, cored and finely chopped
  • ½ each, small red onion and red pepper, finely chopped
  • ¼ cup (64 mL) fresh parsley, chopped
  • 1 tbsp (15 mL) dijon mustard
  • ½ tsp (2.5 mL) each, celery seed, salt and pepper
  • ¼ cup (64 mL) light mayonnaise
  • 1 cup (250 mL) Astro® Original Balkan Plain 1% yogourt

Preparation

  1. Combine all ingredients in a large bowl and toss until thoroughly mixed.
  2. Serve immediately or refrigerate until ready to serve. Will keep up to two days in the refrigerator.
