Ingredients
- 1 cup Astro Original 6% Plain Yogourt
- 1–2 tbsp lemon juice
- ½ cup chicken broth
- 1 tbsp finely diced fresh dill
- 1 lb ground chicken
- 1 egg
- ⅓ cup panko breadcrumbs
- ½ onion diced finely
- 1 tsp salt, divided
- ¼ tsp cumin
- ¼ tsp dried mint
- ½ tsp dried dill, divided
- ½ tsp garlic powder
Preparation
- Preheat oven to 375°F.
- Combine ground chicken, egg, panko, onion, ½ tsp salt, cumin, ¼ tsp dried dill, and garlic powder. Form into equal size meatballs.
- Coat a large skillet with neutral cooking oil and cook meatballs 1–2 minutes per side until golden. Remove from heat and place on a rimmed baking sheet. Bake in the oven for 15 minutes until cooked through.
- In the meantime, make your sauce: combine Astro Original 6% Plain Yogourt with lemon juice, remaining salt, ¼ tsp dried dill and dried mint. Mix well.
- Warm up chicken broth. Once heated through, add 1–2 tbsp at a time to the yogourt mixture. Mix and continue adding until desired consistency is reached.
- Add half of sauce to your serving bowl. Top with cooked meatballs, remaining half of sauce and fresh dill.
- Serve with rice or potatoes and enjoy!
