Apple Cinnamon Muffins
Ingredients
- 1 ¾ cups all purpose flour
- ½ cup sugar
- 1 ½ tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 2 eggs, room temperature
- 1 cup Astro Original 6% Plain Yogourt
- ½ cup 2% milk (can be subbed for whole)
- 1 tsp vanilla
- ¼ cup neutral cooking oil
- 1 cup chopped apples of choice
- For crumble topping:
- ½ cup flour
- ½ cup brown sugar
- 4 tbsp diced butter, room temperature
- 1 tsp cinnamon
Preparation
- Preheat oven to 400°F.
- Whisk dry ingredients: flour, sugar, baking powder, baking soda, salt and cinnamon. In a separate bowl, combine wet ingredients: Astro Original 6% Plain Yogourt, eggs, milk, vanilla and oil.
- Gently incorporate ⅓ of wet batter into the dry ingredients, being careful not to over mix. Repeat with remaining batter. Fold in your apples.
- Divide into 12 muffin tins. Top each with crumble topping.
- Bake for 15–18 minutes or until cooked through (when a toothpick comes out clean). Remove and let cool.
