Chicken Meatballs with Yogourt Dill Sauce

Ingredients

  • 1 cup Astro Original 6% Plain Yogourt
  • 1–2 tbsp lemon juice
  • ½ cup chicken broth
  • 1 tbsp finely diced fresh dill
  • 1 lb ground chicken
  • 1 egg
  • ⅓ cup panko breadcrumbs
  • ½ onion diced finely
  • 1 tsp salt, divided
  • ¼ tsp cumin
  • ¼ tsp dried mint
  • ½ tsp dried dill, divided
  • ½ tsp garlic powder

Preparation

  1. Preheat oven to 375°F.
  2. Combine ground chicken, egg, panko, onion, ½ tsp salt, cumin, ¼ tsp dried dill, and garlic powder. Form into equal size meatballs.
  3. Coat a large skillet with neutral cooking oil and cook meatballs 1–2 minutes per side until golden. Remove from heat and place on a rimmed baking sheet. Bake in the oven for 15 minutes until cooked through.
  4. In the meantime, make your sauce: combine Astro Original 6% Plain Yogourt with lemon juice, remaining salt, ¼ tsp dried dill and dried mint. Mix well.
  5. Warm up chicken broth. Once heated through, add 1–2 tbsp at a time to the yogourt mixture. Mix and continue adding until desired consistency is reached.
  6. Add half of sauce to your serving bowl. Top with cooked meatballs, remaining half of sauce and fresh dill.
  7. Serve with rice or potatoes and enjoy!
